Ingredients
  

  • ½ cup unsalted butter softened
  • cups white sugar or sugar substitute - read below ingredient quantities.
  • ½ cup unsweetend cocoa powder
  • 1 large eggs
  • ½ cup whiskey choose a smooth, rich variety
  • ½ tsp baking soda
  • 1/2 tsp salt
  • cups all-purpose flour

Stevia: Use about 1 teaspoon of powdered stevia (or equivalent for your brand). For chocolate crack cookies, sugar affects both the texture (crackly top) and sweetness.

Tips: Liquid sweeteners may make the dough slightly stickier, so chill it if needed. The crackly texture might be less pronounced with non-granulated substitutes, but they'll still be delicious!

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C). For fan-assisted ovens, reduce the temperature by 10°F (5°C).
    Line baking sheets with parchment paper for easy cleanup and perfect cookies.
  • Cream the Base: In a mixing bowl, use an electric mixer to cream the butter, sugar, and cocoa powder until light and fluffy (about 2–3 minutes).
  • Add the Liquids: Lower the mixer speed and add eggs, one at a time, ensuring each is fully incorporated.
    Mix in the whiskey until smooth and combined
  • Incorporate Dry Ingredients: In a separate bowl, whisk together the flour, baking soda and salt.
    Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined, avoid overmixing to keep the cookies tender.
  • Shape the Cookies: Scoop heaping tablespoons of dough onto the prepared baking sheets, spacing each cookie about 5 cm (2 inches) apart to allow room for spreading.
    For smaller cookies, use a teaspoon-sized scoop to create bite-sized treats.
  • Bake and Cool: Bake for 12–15 minutes, or until the edges are set but the centers remain slightly soft.
    Remove from the oven and let cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
  • Serving Suggestion: Serve these cookies slightly warm for a gooey center or at room temperature for their classic texture. Pair with a glass of milk, a strong coffee, or even a neat pour of whiskey to amplify the flavours. A super delicious dessert served with icecream!

Tips for Success: For an extra touch of indulgence, sprinkle a pinch of flaky sea salt on the cookies before baking. Use high-quality cocoa and whiskey for the best flavour. These cookies freeze well! Store them in an airtight container for up to 3 months.
