Slow-Cooked Lamb Chops in Aromatic Curry Bliss

Nothing beats the warmth of a slow-cooked curry, where tender lamb melts in your mouth, and bold spices fill the air with a tantalizing aroma. This dish is perfect for a comforting dinner with loved ones.

- 1.5kg loin lamb chops
- 125ml cooking oil
- 1 tbsp lamb rub herbs and spices optional
- 1 bay leaf
- 1 cinnamon stick
- 1 tbsp vinegar
- 2 large onions chopped
- 3 cloves of garlic crushed
- ½ tsp ground find ginger
- ¼ tsp turmeric
- 4 tbsp strong curry powder
- small potates cut in half
- 3 carrots scraped and cut
- 1 small punnet cherry tomatoes
- sal to taste
- 1x 750ml boiling water
- 1x 500ml boiling water
Creating the Flavour Base
Add curry powder, ground ginger, cinnamon stick, bay leaf, vinegar, and turmeric. Stir quickly to combine the spices, ensuring they release their full aroma.
Cooking the Lamb to Perfection
Reduce the heat and add the lamb chops. Mix well to coat the meat evenly with the spice mixture before adding the boiling water. Pour in 750 ml of boiling water, cover the saucepan, and let it simmer over medium heat until most of the water evaporates.
Adding Vegetables and Final Simmer
Once the initial liquid has reduced, add another 500 ml of boiling water along with the potatoes, carrots, and salt to taste. When the potatoes are almost tender, add the cherry tomatoes. Bring everything to a boil, then reduce the heat and let it cook slowly until the meat and vegetables are tender.
