Ingredients
  

  • 10ml ground ginger
  • 80ml chopped fresh mint
  • 60ml chopped fresh coriander
  • 1 green chili finely chopped
  • 2ml five-spice powder or a spice blend of your choice
  • 15ml honey
  • 60ml rice wine vinigar
  • 125ml oil
  • salt and pepper to taste

Method:

  • Prepare the Mint Sauce: In a food processor, combine the ground ginger, mint, coriander, chili, five-spice powder, honey, rice wine vinegar, and oil. Blend until smooth. Taste the sauce and adjust seasoning with salt and pepper as needed.
  • Marinate the Lamb Chops: Place the lamb chops in a sealable bag or shallow dish. Pour 45ml of the prepared mint sauce over the chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or longer for enhanced flavour).
  • Grill the Chops: Preheat your grill to moderately high heat. Remove the lamb chops from the marinade, allowing any excess to drip off. Grill the chops for about 5 minutes per side, or until cooked to your desired level of doneness.
  • Serve: Transfer the grilled lamb chops to serving plates. Drizzle with the remaining mint sauce for an extra burst of flavour. Serve hot with steamed rice or boiled small potatoes for a complete meal.
  • Tips: Let the lamb chops rest for a few minutes after grilling to retain their juices. Experiment with different spice blends to customize the flavour profile to your liking. Garnish with additional fresh mint and coriander for a vibrant presentation.
