- 1 green pepper deseed and chopped
- 1 Pineapple Cut away the outer peel. Use a sharp knife to carefully cut away the outer peel, from top to bottom, following the contours of the pineapple. Make diagonal cuts to carve out the pineapple eyes. Make the final cuts.
- 1 sweet yellow pepper deseeded and chopped
- 1 red pepper chopped
- 1 white onion chopped
- 3 snacking cucumbers
- bunch of coriander roughly chopped
- 2 cups frozen sweet coren
- 1 chilli deseeded and chopped
- salt and pepper to taste
- juice of 1 lime for that extra tangy flavour
- 2 tablespoons olive oil
- 1 tablespoon rice wine vinigar optional
