Healthy Crunchy Salad and Ultra-simple Recipe

This salad It’s made with fresh and crisp ingredients and is bursting with flavour.

Ingredients
  

  • 1 green pepper deseed and chopped
  • 1 Pineapple Cut away the outer peel. Use a sharp knife to carefully cut away the outer peel, from top to bottom, following the contours of the pineapple. Make diagonal cuts to carve out the pineapple eyes. Make the final cuts.
  • 1 sweet yellow pepper deseeded and chopped
  • 1 red pepper chopped
  • 1 white onion chopped
  • 3 snacking cucumbers
  • bunch of coriander roughly chopped
  • 2 cups frozen sweet coren
  • 1 chilli deseeded and chopped
  • salt and pepper to taste
  • juice of 1 lime for that extra tangy flavour
  • 2 tablespoons olive oil
  • 1 tablespoon rice wine vinigar optional

Note: You can adjust the quantities for a larger salad to serve more people.

Instructions
 

  • Combine all the chopped vegetables and coriander in a large mixing bowl.
    Add the thawed sweet corn to the bowl.
    Squeeze the juice of one lemon over the salad.
    Season with salt and pepper to taste.
    Gently toss all the ingredients until well mixed.

Let the salad sit for about 30 minutes before serving to allow the flavours to meld together.
