Now that it is officially Spring, it is time to step back into the kitchen wit some fresh yet affordable meals that get you excited to cook and eat!

With food costs soaring and salaries remaining the same it is become even trickier to create delicious meals that not only fill the belly but also align with our budgets. So, for this reason, we are keeping it simple with our more affordable ingredients such as chicken breasts!
Not only are we looking at saving on groceries, but as we are also tired from a long day of work, chores and children making dinner should be simple! That is why these stuffed chicken breasts are my favourite go-to meal on any given week night. With 20 minutes of prep and 20 minutes of air frying, dinner is served in no time and your family will think you are a real fabulous chef making such a succulent meal!
Perfect for the Air Fryer!
Air fryers are certainly all the rage since lock down and more people are opting for easy, fast and delicious meals that can be made with practically no effort. Not to mention the huge electricity cost saving that air fryers provide! Stuffed chicken breasts also hardly leave a mess in your air fryer making the clean up process a breeze!
Chefs Tip
Make sure to marinate your chicken breasts in garlic and olive oil with your favourite chicken spices for at least 20 minutes to really add that extra flavour!
Succulent Stuffed Chicken Breasts with Salsa Verde
Ingredients
For the Chicken Breasts
- 4 Chicken Breasts
- 1 cup Olive Oil
- 3 cloves Fresh Garlic finely chopped (3 tsp crushed garlic)
- 2 tsp Chicken Spice We love Cape Herb Spices
- 2 tsp Robertsons Garlic & Rosemary Spice
- Salt to taste
- Pepper to taste
- 4 tbsp Cottage Cheese
For the Salsa Verde
- 2 large Tomatoes finely chopped
- 1 large Onion finely chopped
- 1 clove Garlic finely chopped (1 tsp crushed garlic)
- 1 large Fresh Jalapeño finely chopped
- 1 handful Fresh Coriander finely chopped
- ½ large Lemon juiced
- Salt to taste
- Pepper to taste
Instructions
For the Chicken Breasts
- Marinate the chicken breasts in olive oil, garlic and spices for 20 minutes at least.
- Cut a slice through the middle of the chicken breast and stuff each breast with 1 tablespoon of cottage cheese.
- Place chicken breasts into the air fryer and cook for 15-20 minutes at 180°C.
For the Salsa Verde
- If you have a food processor, simply add all the ingredients into the food processor and turn it on until all is finely chopped.
- If you do not have a food processor, no worries, you will simply need to finely chop all the ingredients and mix them together in a bowl.
To Serve
- Place the stuffed chicken breasts on a plate and spoon over some of your freshly made salsa verde.
