How to Make Homemade Nando’s Feast
Ingredients
Nando's Spicy Rice:
- 1 tbsp olive oil
- 1 small onion diced
- 1 small red pepper diced
- ½ tsp chilli flakes
- 1 tsp turmeric
- 1 teaspoon smooked paprika
- 300g long grain rice
- 600ml hot chicken stock
- salt and pepper to taste
- 100g frozen peas
Nando's Chicken Breast:
- 2 tbsp olive oil
- 2 tsps chilli flakes or to taste
- 4 cloves garlic
- 1 cup homemade Nando's Sauce (recipe below)
- ½ tsp salt or to taste
- Black pepper to taste
- 4 large boneless, skinless chicken breasts
How to Make Your Own Nando's Sauce:
- 1-2 handfuls red chillies African Bird's Eye peppers or substitutes
- 4 cloves garlic chopped
- 1 teaspoon smoked paprika
- 1 small handful of chopped coriander
- 1 small handful of parsley
- ½ cup olive oil or vegetable oil
- juice from 1 lemon
Peri-Peri Sauce:
- 2 tbsps paprika
- 1 tbsp salt
- 1 tsp black pepper
- 2 tbsp dried basil
- 2 tbsps dried thyme
- 2 tbsps oregano
- ¼ small red onion
- 1 large handful of frsh parsley chopped
- 9 cloves garlic
- African Bird's Eye chillies 3 for mild, 10+ for hot
- 1 green chilli
- 2 bay leaves
- 1 red bell pepper
- 2 thin slices of lemon peel
- juice from about 6 lemons
- 2 tbsps white wine vinegar
- 100ml vegetable oil
- 250ml cold water
Nando's Homemade Coleslaw Salad and Perinaise Sauce:
Perinaise Sauce:
- 3 tbsps mayonnaise
- 1-2 tbsps homemade Nando's sauce
Nando's Homemade Coleslaw:
- generous squeeze of Nando's Perinaise sauce
- ¼ white cabbage
- ¼ red cabbage
- 1 spring onion finely sliced
- 2 radishes sliced
- a small handful of fresh coriander or parsley
- juice of ½ lemon
- 1 tbsp heaped, Greek yogurt
Instructions
Nando's Spicy Rice – Method
- In a large saucepan, sauté the diced onion and red pepper in olive oil over gentle heat for 3 minutes until softened and translucent.
- Add the chili flakes, turmeric, and smoked paprika, cooking for an additional 2 minutes. If necessary, add a little water to prevent drying.
- Stir in the rice, hot chicken stock, salt, and pepper. Bring to a boil, cover with a lid, and reduce the heat. Cook for 7 minutes until the rice is almost cooked.
- Add the frozen peas, stir, and cook for another 3-5 minutes until the rice is fully cooked and the peas are heated through.
- Serve with your favorite homemade Nando's chicken!
Nando's Chicken Breast – Method
- Mix all ingredients in a large bowl. Add the chicken breasts, coating them well. Cover and marinate for at least 2 hours or up to 24 hours.
- Heat a griddle or frying pan over high heat for 2 minutes.
- Cook the chicken breasts for 7-9 minutes on each side, depending on thickness. Ensure they are fully cooked by cutting into the thickest part.
- Alternatively, bake in a preheated oven at 200°C for 25-30 minutes or grill on high for 7-9 minutes on each side until cooked through.
How to Make Your Own Nando's Sauce – Method
- Blitz all ingredients in a food processor until well combined but not too smooth.
- Bottle in sterilized bottles while hot and refrigerate.
Peri-Peri Sauce – Method
- Blend all ingredients except the vegetable oil in a food processor.
- Gradually add the vegetable oil to the blended mixture.
- Store in airtight bottles or containers in the refrigerator.
Nando's Homemade Coleslaw Salad and Perinaise Sauce – Method
Perinaise Sauce:
- In a small bowl, mix 3 tablespoons of mayonnaise with 1-2 tablespoons of homemade Nando's sauce.
Nando's Homemade Coleslaw – Method
- Mix all ingredients and refrigerate for at least 1 hour.
How to Make Hitchcock / Flatty Chicken – Marinate for 24 hours – Method
- Using kitchen scissors, cut along one side of the backbone from the tail to the neck, and repeat on the other side. Discard the backbone.
- Lay the chicken flat with the opened side down and press firmly on the chest to flatten.
- Rinse and dry the carcass.
- Rub the chicken on both sides with Nando's sauce, including under the skin. Marinate in the fridge for 24 hours.
- Barbecue over medium coals, turning and basting with Nando's sauce, for about 30-34 minutes.
