Mashed Potato Squares in under and Hour
These mashed potato squares are the perfect combination of a creamy mashed potato centre and a crispy roast potato skin. This is achieved by mashing potatoes and then adding the flours to them and creating a dough. The dough is then rolled out into long sausage shapes and cut into smaller pieces, similar to the process of making potato gnocchi. The squares are flattened with a fork, creating square shapes. The potato squares will bake in the oven for 20 minutes until they have a crispy golden brown coating. Take care not to over-bake them, as this might cause the soft potato centre to harden.
Only 4 Ingredients Needed
To make these scrumptious mashed potato squares, you only need 4 ingredients– potatoes, potato flour, rice flour, and tapioca flour. The only spices you need are salt and pepper. The purpose of the tapioca flour is to add thickness to the dough mixture, as it contains a high starch content. Tapioca flour also ensures that the potato squares will have a crispy coating with a golden hue.
Serve these unique mashed potato squares with a dip or sauce of your choice such as a ranch dressing or sriracha mayo, and serve as a starter or a snack.
Mashed Potato Squares
Ingredients
- 5 large Potatoes peeled
- 2 tbsp Rice Flour
- 1 tbsp Tapioca Flour
- 1 tbsp Potato Flour
- Sea Salt and Pepper to taste
Instructions
- Boil or steam your peeled potatoes until soft.
- Preheat the oven to 180°.
- Mash the potatoes and then add the flours and salt and pepper. Mixing to create a dough.
- Take chunks of the dough and roll them into long sausage shapes. I made about four long sausages from all of my dough.
- Then chop the sausages up into pieces and flatten each piece slightly with a fork, creating little squares.
- Lightly grease a baking tray and place your squares into the tray and pop in the oven.
- Allow to bake for about 20 minutes or until the outside of your squares are crispy brown. Over baking at this point will cause the mash inside to harden leaving you with completely crunchy chips.
