A Quick to Make Sweetcorn, Chicken and Bacon Salad
In just over 30 minutes you can have this deliciously fresh salad ready to serve. The first step is to cook your chicken and grill your bacon, before shredding and dicing. Followed by grilling your sweetcorn and then cutting the kernels away from the core. Any leftover mielies from a braai will also work fabulously (maybe the braai that you ate too many braai broodjies at).
Then it is as simple as mixing your raw, chopped and sliced ingredients, such as tomatoes, onions and your coleslaw mix. And finally, adding your prepared meats and grilled sweetcorn with some spices and maybe a dressing.

Grilled Sweetcorn Salad
Ingredients
- 2 Large Corns Grilled
- 2 cups Red and White Coleslaw Shredded
- 1 Onion Finely sliced
- 1 Tomato Quartered
- 1 Chicken Breast Cubed or Shredded
- 1/2 cup Bacon Grilled, drained and diced
- 1/2 cup Creamy Salad Dressing
- 1/2 tsp Barbeque Spice
- Salt and Pepper To taste
Instructions
- In a large salad bowl, add the coleslaw. Drizzle the salad dressing over the coleslaw.
- Layer the shredded or cubed chicken, bacon bits and onions. Arrange the sliced tomatoes around the dish.
- Remove the corn kernels from the corn by cutting it off. In a bowl, mix the corn kernels with salt, pepper and BBQ spice.
- Sprinkle the corn mixture over the salad.
