Apple Cinnamon Flapjacks with Caramelized Banana Topping
Ingredients
Flapjacks:
- 1 cup whole wheat flour
- 3 tsps baking powder
- 1 lemon juice extracted
- 3 apples peeled and diced in cubes
- 1 tbsp cinnamon
- 1 cup Greek yogurt or preferred flavour
- 1 tbsp honey
- 2 eggs
- 1-2 tbsps milk optional, for adjusting batter consistency

- 3 bananas diced
- 1 tbsp butter
Instructions
- Place diced apples in a microwave-safe bowl and microwave for about 4 minutes until softened.
- In a large bowl, sift together the flour, cinnamon, and baking powder.
- In a separate bowl, mix the Greek yogurt, honey, lemon juice, and egg yolks until well combined.
- Gradually incorporate the wet mixture into the dry ingredients, stirring until smooth. Be careful not to overmix.
- In another bowl, beat the egg whites to soft peaks, then gently fold them into the batter. The batter should be thick, which results in extra fluffy flapjacks.
