Two Ways to Make Melkkos
The ‘Frummels’ Method (Our Favorite!)
- Small buttery flour crumbs are whisked into simmering milk, transforming into a velvety, rich porridge.
The ‘Snysels’ Method
- Handmade noodles are carefully cut and boiled in milk, creating a heartier, more textured dish.
Melkkos Recipe
Ingredients
- 2 litres milk
- 4 tbsps butter – heaped
- ¼ tsp salt
- cinnamon and sugar for serving
Instructions
Prepare the Crumb Mixture:
- In a large mixing bowl, add the cold butter and flour.
- Use your fingertips to gently rub the butter into the flour until the mixture resembles fine breadcrumbs.
- Lift your fingers above the bowl while rubbing to help aerate the mixture, ensuring a lighter texture.
Heat the Milk:
- Slowly bring the milk to a boil in a large saucepan over medium heat. Stir occasionally to prevent scorching.
Combine the Ingredients:
- Once the milk reaches a boil, gradually sprinkle in small handfuls of the flour mixture while whisking continuously.
- Keep whisking to prevent lumps from forming.
Simmer:
- Reduce the heat to low and let the mixture simmer for at least 5 minutes, stirring occasionally.
- The mixture will thicken into a smooth, porridge-like consistency.
