6 Minute Microwave Chocolate Cake
Ingredients
- 1 cup cake flour
- 2 large eggs (beaten)
- 3 tbsps. cacao
- 1/4 cup coconut oil (dissolved)
- 1 cup hot water
- 1 tbsp coffee
- pinch of salt
- 4 tbsps. brown sugar
- For the chocolate ganache
- 100g dark chocolate, broken into pieces
- 5 tbsps. double cream
Instructions
- Spray a medium microwave-safe bowl with non-stick spray and set aside.
- In a mixing bowl, combine the following ingredients:sifted flour, baking powder, salt, and cacao
- Sprinkle sugar on top, do not mix
- Make a hole in the middle and the beaten eggs, fold carefully
- Add the liquid ingredients to the dry ingredients and mix thoroughly until you have a lump-free batter. Pour the mixture into microwave dish and gently tap to pop any air bubbles. Cover with cling film.
- Microwave on full power for 6 minutes. Remove and check if the cake is cooked by poking a skewer into the middle: if it comes out clean, the cake is ready. Allow the cake to stand for 5 minutes, then remove the cling film and turn out onto a cooling rack or serve straight from the bowl.
- Optional: For a ganache, melt chocolate on half power for approximately 2 minutes, stirring every 30 seconds until melted. Add cream and mix thoroughly until smooth and glossy. Once the cake is cool, spread over the ganache and sprinkle with coconut of more chocolate. ENJOY!
