Mexican Salad
Ingredients
For the Salad
- 1 large head crisp lettuce
- ½ cup matured cheddar cheese grated
- ½ cup onion chopped
- ½ cup black olives sliced
- 4 large tomatoes sliced
- 1 cup tortilla chips crushed
- 1 cup canned corn
Avocado Dressing
- 1 large avocado
- 1 tbsp lemon juice mashed
- ½ cup sour cream
- ½ cup vegetable oil
- ½ tsp sugar
- ½ tsp garlic crushed
- ½ tsp chilli powder
Instructions
- Break lettuces into bite pieces.
- Combine lettuce, cheese, onions, olives and tomatoes in a salad bowl.
- Add avocado lemon juice, sour cream, oil, sugar and garlic and chilli powder in blender.
- Toss salad with dressing and add crushed tortilla chips.
